Chef Salad
Ingredients
- 6 cups spring mix salad greens
- 2 medium tomatoes, coarsely chopped
- 6 hard-boiled large eggs, coarsely chopped
- 3 slices deli turkey, cut into thin strips
- 3 slices deli ham, cut into thin strips
- 1/2 cup shredded cabbage
- 4 green onions, sliced
- 4 fresh baby carrots, sliced
- 4 radishes, thinly sliced
- 1/4 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1/2 cup reduced-fat Thousand Island salad dressing or dressing of your choice.
Instructions
Combine all ingredients in a large bowl. Toss to coat with dressing.
Air Fryer Chicken Bites
Ingredients
- 3 pounds chicken breast, cut into 1 inch cubes
- 1/4 cup Italian dressing
- 1 tablespoon Adobo seasoning
- 1 tablespoon dry Italian herbs
- 1 teaspoon kosher salt
- 1 tablespoon Sazon seasoning , homemade or store bought, optional.
Instructions
- In a large bowl combine the chicken with Italian dressing, adobo seasoning, dried Italian herbs, kosher salt and optional, sazon.
- Spray the basket with oil. Air fry the chicken in an even layer, in batches as needed at 400° F for 12 minutes, or until browned and cooked through, shaking the basket halfway.
Rao’s “Cowboy Caviar” Southwest Salad/Black Bean Corn Salad
Ingredients
- 1 can black beans
- 1 can sweet corn
- 1 diced red onion
- 1 cup diced bell pepper (red, yellow, etc)
- 1 diced tomato
- 1 diced avocado
- 1 cup diced cucumber
- +/- 1 diced jalapeno
- 1 bunch chopped cilantro.
Recommended dressing: lemon honey garlic (or your preferred dressing).
Instructions
Combine all ingredients in a large bowl.
Roasted Frozen Veggies
Ingredients:
- 2 pounds frozen vegetables, (a mix of broccoli, cauliflower, and carrots) – do not thaw.
- 5 tablespoons olive oil
- ½ teaspoon black pepper
- ⅛ teaspoon ground paprika
- 1 ½ teaspoons onion powder
- 1 ¼ teaspoons garlic salt, (use less or more according to your taste)
- ¼ teaspoon dried thyme.
Instructions
- Set the oven to 450°F. Put the sheet pan on the top rack (in the upper third of the oven) and warm it up.
- In a large bowl or zip lock, add frozen vegetables and all of the remaining ingredients. Stir well to combine.
- Remove the hot sheet pan from the oven. Carefully put the seasoned frozen vegetables onto the sheet pan, in a single layer with nothing overlapping.
- Roast the vegetables for 20-30 minutes or longer as needed (depending on the size of your veggies) until they crisp up (on the edges). Flip the vegetables and rotate the pan every 10 minutes.
Garlicky Greek Yogurt Sauce
Ingredients:
- 1 cup plain Greek yogurt
- 3-4 minced garlic cloves
- 1 tbsp lemon juice
- 1 tbsp olive oil
- +/- 1 tbsp mayonnaise
- To taste: salt, pepper, dill, paprika.
Enjoy with: chicken, fish, veggies, anything!
Make Your Own Salad Dressing
Ingredients:
- ¼ cup fresh lemon juice
- 1 small garlic clove, grated
- 1 teaspoon Dijon mustard
- ¼ teaspoon sea salt, more to taste
- Freshly ground black pepper
- ½ teaspoon honey, or maple syrup, optional
- ¼ to ⅓ cup extra-virgin olive oil
- ½ teaspoon fresh or dried thyme, optional.
Instructions
- In a small bowl, whisk together the lemon juice, garlic, mustard, salt, pepper, and honey, if using.
- Drizzle in the olive oil while whisking and continue to whisk until the dressing is emulsified. Alternatively, combine everything in a jar with a tight-fitting lid and shake to combine.
- If your dressing is too tangy, add more olive oil, to taste.
- Add the thyme, if desired, and season to taste. Store in the fridge for up to 1 week. The olive oil will solidify a bit in the fridge. To soften, let the dressing sit at room temp for a few minutes and stir before using.
Overnight Oats
Ingredients
- 1 clean jar with lid
- ½ cup rolled oats (½ cup = about half the jar)
- ½ cup low fat milk (or soy milk, almond milk, oatmilk)
- 2 tbsp nuts of choice (and/or seeds)
- 1 tsp cinnamon (or other spices like cardamom or vanilla extract)
- 1-2 tsp honey.
Optional:
- ⅔ tbsp chia seeds
- some slices of fruit
- any berries (fresh or frozen).
Instructions
- Throw everything in a jar, screw the lid on top, shake, and off it goes into the fridge.
- The next morning add a dash of milk, a sweetener (if you want) and enjoy.
DIY Cold Brew Iced Tea
- Fill container with room temp water, place 7-8 tea bags per gallon (more or less depending on strength of tea you want), sit on counter for half hour, then place in fridge overnight (6-8 hours), remove tea bags. Add honey if preferred.
